123ce.com provides the courses you need in order to upgrade your ACF Certification Level. In addition to the requirements listed below, you must provide documentation of three 30-hour courses in Nutrition, Food Safety and Sanitation, and Supervisory Management. If these courses were taken more than 5 years ago, you must take the 8-hour refresher courses. Learn more below!
1. Upgrade from Certified Culinarian to Certified Sous Chef
To move up from CC to CSC, you will need certain educational and work experience requirements.
Education: A High School Diploma/ GED/ 150 CEH with 5 yrs. entry level culinary experience; an Associate’s Degree in Culinary Arts Three years of culinary work experience; an ACFEF Culinary Arts Program Certificate with four years of culinary work experience; an ACFEF Apprenticeship program.
Experience: All Candidates must have two years of experience supervising a shift or food station. Experience must be within the past 10 years.
Additional requirements include successful completion of the ACF writing and practical exams.
2. Upgrade from Certified Pastry Culinarian to Certified Working Pastry Chef
To move up from CC to CSC, you will need certain educational and work experience requirements.
Education: A High School Diploma/ GED/ 150 CEH with 5 years entry level pastry experience; an ACFEF Culinary Arts Program Certificate with 4 years of pastry experience; an Associate’s Degree in Culinary Arts with 3 years entry level culinary/pastry experience; an ACFEF Apprenticeship program.
Experience: All candidates must have two years of experience supervising a shift or food station. Experience must be within the past 10 years.
Additional requirements include successful completion of written and practical exams.
3. Upgrade from Certified Sous Chef or Certified Working Pastry Chef to Certified Chef de Cuisine
To move up from CC to CSC, you will need certain educational and work experience requirements.
Education: A High School Diploma/ GED/ 150 CEH; an Associate’s Degree in Culinary Arts; an ACFEF Apprenticeship program.
Experience: Three years as Sous Chef who supervises a shift or station(s) in a food service operation. Must have supervised at least two full time people in the preparation of food. Experience must be within the past 10 years.
Additional requirements include successful completion of written and practical exams.
4. Upgrade from Personal Certified Chef to Personal Certified Executive Chef
*Completion & documentation of a 30-hour Business Management within the last 5 years in place of Supervisory Management*
To move up from CC to CSC, you will need certain educational and work experience requirements.
Education: A High School Diploma/ GED/ 250 CEH; an Associate’s Degree in Culinary Arts; an ACFEF Apprenticeship program.
Experience: Three years as a full time Personal Chef engaged in all aspects of food preparation and management on a “cook-for-hire-basis.” Experience must be within the past 10 years.
Additional requirements include successful completion of written and practical exams.
